I remember the first time I went to 54th Street Bar & Grill. I saw this thing called “Gringo Dip” under the appetizer section and it’s described as:

“Five Four’s famous House recipe, a creamy Pepper Jack cheese dip blended with pico de gallo and the Street’s secret spices. Served with salsa and tortilla chips.”

I love dips, especially anything served with salsa, so I gave it a try. It was so good! Any time I go there, I have to get the Gringo Dip. I was excited to see a copycat recipe posted on Pinterest and decided to make it for an office luncheon. I followed the copycat recipe exactly as listed, BUT I cooked mine in a crock pot.  Here is how mine turned out!

It’s obviously not the real thing, but it was still pretty good. If you don’t like spicy things, do NOT try this because it has a kick. I don’t think it’s too spicy, but I like spicy things (to reduce the spice, you could probably not put as much cayenne pepper in it or remove it all together). Here are a couple of reviews:

“That Gringo dip really hit the spot.  Spicy, but not too spicy.  Cheesy, but not too cheesy.  The combination of spinach, peppers and spices was super-sexy-hot, but not too hot!  Well done.”

“It’s soooooo good! Like a mexican fiesta in your mouth! Seriously, I could eat it all day.”

“Pretty awesome!”

“Pleasantly mild and deliciously cheesy, yet with enough green stuff to convince you that it’s healthy.”
