pina colada

Summer is here!  Well, I guess by calendar standards, it really isn’t.  But, socially, Summer is here!!  Pool parties, backyard BBQs, and picnics in the park are here to stay for the next few months.  There are a lot of things that can be modified in our diets to accommodate these social events.  Who loves a good frozen margarita or a good pina colada by the pool?  Me!  Who likes the hundreds of calories??  Not I!

Check out this recipe for a healthier version of a frozen pina colada:

Frozen Virgin Piña Colada

Serves: 6

Ingredients:
1 cup unsweetened coconut milk (such as So Delicious)
2 cups frozen banana puree (click here to learn how to make your own) or banana ice cream (such as Iskream)
1/4 teaspoon coconut extract
1/2 teaspoon vanilla extract
1 can (13.5 ounces) crushed pineapple
1 cup ice

Directions:
Combine all ingredients in a blender until smooth.

Nutrition score per serving: 260 calories, 14g fat (11g saturated), 13g carbs, 3g protein, 1g fiber

How about a delicious, refreshing frozen lemonade???

Frozen Lemonade

Serves: 6

Ingredients:
6 lemons, juiced
1 cup granulated sugar
4 cups cold water
1 cup ice

Directions:
Combine all ingredients in a blender until smooth.

Nutrition score per serving: 139 calories, 0g fat (0g saturated), 34g carbs, 0g protein, 0 fiber

Yumm!  Okay, I would add booze to both recipes and that would add about 100 calories per drink.

Enjoy!  Happy Summer!
